More Fun With Steelhead Trout

About as far from "blackened" as you can get, but still good.Further experiments with the steelhead trout, from Costco I've become enamored of of late.

I wanted to see how it held up to heat, so I dug out my jar of Penzey's Cajun seasoning and applied what I thought was a judicious amount. I wasn't going for a full blackened - I'm not actually a huge fan of that flavor. Too much cayenne and char, not enough other flavors.
