Oh, Hey, Look, More Fish And Potatoes

I should remember roasted red peppers + spinach as a flavor combo. It's good.Allow me to explain why I'm bothering to post another damn picture of lightly sauteed fish and a potato product. Therein lies a mildly interesting tale.

The original plan was actually to measure out and create a recipe for that brown flecked mass at 2:00. But about halfway through, I lost the thread and just started throwing shit into the pot. So there's no recipe.

What that stuff is, in fact, is a parsnip-potato mash with bacon. It involves 3/4 pound peeled parsnips, 10 oz peeled potato, two slices of chopped bacon, and then... um... some milk, and some garlic powder, and some rosemary. Whoops.

Anyway, the idea was to balance the sweetness of the parsnips so that it wasn't overwhelming. A bit of pork, a bit of smoke, a bit of herb, and a bit of diluting with potato did the trick.

Also on this plate - simply sauteed mahi mahi - just salt, pepper, olive oil, heat, and time - and some sauteed spinach with garlic and roasted red peppers. Which was a good idea, but there was too much garlic that wasn't cooked long enough, which is not a mistake I usually make.

Still, it wasn't bad, especially as the last home-cooked meal for at least... three days.
